Pair with Columbia Crest Chardonnay
Serves 4
Total Time: 3 hours and 30 minutes
Difficulty: Moderate

Ingredients

Steak Marinade
  • 1⁄4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon onion powder
Shrimp Marinade
  • 2 teaspoons lemon juice
  • 3 garlic cloves, minced
  • 2 tablespoons parsley
Skewers
  • 1⁄2 pound rib-eye or sirloin steak
  • 1⁄2 pound shrimp
  • 2–3 large bell peppers
  • 1 red onion
  • 4–6 ounces mushrooms
  • Salt and pepper (optional)
  • Garlic salt (optional)

Directions

  1. In a bowl, prep the marinade for the steak and whisk it all together until combined. Set aside.
  2. Cut steak into uniform pieces. They should be bite-size, no smaller than an inch. Place into a resealable bag.
  3. Add the marinade to the resealable bag with the steak, and let marinate in the fridge for a minimum of 3 hours.
  4. While the steak marinates, clean and prep your shrimp, keeping them whole, and place them into a separate bowl.
  5. Prep the marinade for shrimp and add it to the shrimp bowl. Mariande for a minimum of 1 hour and a maximum of 4 hours. Let rest until ready for assembly.
  6. If you’re using wooden sticks as skewers, soak in water before use. If using metal skewers, set aside until needed.
  7. Once the steak and shrimp have marinated, cut the vegetables into uniform, bite-sized pieces. Place them in a bowl or plate to begin the assembly.
  8. Grab a skewer and start the fun! You can assemble in any order you’d like. Personally, I like to have peppers on the end since they are sturdier. Grab a veggie or two, then a steak bite, followed by a veggie, then shrimp, and repeat to your liking.
  9. Place all your skewers on a tray and drizzle the veggies with olive oil. Season to your liking (garlic salt is highly recommended here).
  10. Preheat a grill to medium-high heat at 425 degrees Fahrenheit. Place skewers on grill.
  11. Grill between 8–10 minutes, flipping halfway through cooking, 4–5 minutes per side.
  12. Once ready, serve warm and enjoy! Pack any leftovers for lunch the next day — the flavors are even better then!
