Marinated Olives

Citrus Herb Marinated Olives

Serve as an appetizer or enjoy it alongside our Cabernet Sauvignon.

Ingredients

  • 16 oz pitted Castelvetrano Italian olives
  • 16 oz pitted Kalamata olives
  • 4 garlic cloves, smashed
  • 3 strips of orange rind
  • 1 tbsp orange juice 
  • 3 sprigs of rosemary 
  • 2 sprigs of thyme
  • 2/3 cup olive oil 
  • 3/4 tsp red pepper flakes 
  • 3/4 tsp freshly ground black pepper
  • Flaky sea salt to liking

Directions

  1. Drain the olives from the brine and place in a large mixing bowl.  Add in remaining ingredients and toss gently to combine. 
  2. Transfer mixture to large sauté pan. Heat mixture over medium heat allowing the oil to come up to a gentle sizzle. Cook between 5-6 minutes, stirring occasionally. 
  3. Once the mixture has become fragrant and heated through, transfer to a serving dish. Serve alongside toasted crostini, roasted salmon, or enjoy alone.
