Smoked Gouda & Aged Cheddar Mac n' Cheese

Ingredients

Pasta
  • 1 pound of Cellentani or Cavatappi Noodles
  • 1½ cups heavy whipping cream
  • 1 tablespoon Dijon or French mustard
  • ¼ pound smoked Gouda, grated
  • ½ pound sharp cheddar, grated
  • ¼ pound Gruyère, grated
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon paprika
  • 1 teaspoon ground white pepper
  • Salt, to taste
Bread Crumb Topping
  • ½ cup panko
  • 2 tablespoons melted butter
  • 2 tablespoons Parmesan cheese, grated
  • Paprika and salt, to taste

Directions

  1. In a large pot bring 4 quarts of water to a boil over high heat.
  2. Add 1 teaspoon of coarse salt to water and add pasta.
  3. Stir frequently for 10 minutes to avoid noodles sticking together. Once the pasta is cooked to al dente, remove from heat and strain.
  4. Add pasta back to the pot. Add the remaining pasta ingredients while consistently stirring so the cheese melts evenly and everything is completely combined.
  5. Preheat oven to broil. Coat the bottom of a large baking dish with butter or cooking spray. Add the mac n’ cheese mixture to the dish.
  6. Combine the bread crumb ingredients. Sprinkle this mixture over the top of the mac n’ cheese. Broil for about two minutes, or until browned.
  7. Serve and enjoy!
