Smoked Gouda & Aged Cheddar Mac n' Cheese

Ingredients
Pasta
- 1 pound of Cellentani or Cavatappi Noodles
- 1½ cups heavy whipping cream
- 1 tablespoon Dijon or French mustard
- ¼ pound smoked Gouda, grated
- ½ pound sharp cheddar, grated
- ¼ pound Gruyère, grated
- ½ teaspoon cayenne pepper
- ¼ teaspoon paprika
- 1 teaspoon ground white pepper
- Salt, to taste
Bread Crumb Topping
- ½ cup panko
- 2 tablespoons melted butter
- 2 tablespoons Parmesan cheese, grated
- Paprika and salt, to taste
Directions
- In a large pot bring 4 quarts of water to a boil over high heat.
- Add 1 teaspoon of coarse salt to water and add pasta.
- Stir frequently for 10 minutes to avoid noodles sticking together. Once the pasta is cooked to al dente, remove from heat and strain.
- Add pasta back to the pot. Add the remaining pasta ingredients while consistently stirring so the cheese melts evenly and everything is completely combined.
- Preheat oven to broil. Coat the bottom of a large baking dish with butter or cooking spray. Add the mac n’ cheese mixture to the dish.
- Combine the bread crumb ingredients. Sprinkle this mixture over the top of the mac n’ cheese. Broil for about two minutes, or until browned.
