Bucatini Pasta with Spiced Red Sauce

Ingredients

  • 1 lb Bucatini shaped pasta, or any similar shaped noodle
  • 2 28 oz cans of San Marzano whole tomatoes, peeled
  • 1 small yellow onion, diced
  • 5 cloves garlic, freshly minced
  • 1 tablespoon red pepper chili flakes, crushed
  • ½ cup fresh basil leaves chopped, or 1 tablespoon dried basil
  • 1 teaspoon salt for cooking, 2 tablespoons for pasta water
  • 1 teaspoon ground black pepper
  • 2 teaspoon dried oregano
  • 3 tablespoons fresh olive oil
  • 2 tablespoons parmesan cheese, reserve rind
  • 3 tbs of olive oil
  • 1/4 tsp of garlic powder
  • 1/4 tsp of onion powder 
  • 1 tsp lemon pepper
  • Pinch of red pepper flakes 
  • Salt
  • Pepper

Directions

  1. In a heavy bottom pot, heat olive oil over medium–high heat. Once heated, add diced onions. Cook until translucent.
  2. Once onions have finished cooking, add the crushed red pepper flakes. Continue cooking and stirring for an additional two minutes.
  3. Add garlic to pot, mix and cook until fragrant. Add tomatoes and oregano, stir until combined.
  4. As the sauce cooks, break apart the whole tomatoes with a spatula or wooden spoon. Bring the temperature to low and let the sauce simmer for an additional 25 minutes.
  5. Optional: Place the reserved parmesan rind into the sauce, this will add a delicate creamy character. Let simmer with sauce for remaining time.
  6. While sauce is cooking, heat up a large pot of water. Season water with salt, and let the water come to a rolling boil.
  7. Once boiling, add pasta, and cook according to package instruction, or until pasta has reached desired tenderness.
  8. Remove parmesan rind and discard. In the tomato sauce pot, stir in salt, pepper, and fresh basil (retain some for a garnish), cooking for an additional few minutes. Taste and season to your liking.
  9. From the boiling water, place the pasta directly into the sauce, gently mixing until combined.
  10. Serve, topped with remaining basil and parmesan.
